From Scratch Juicy Burger Patties

Although there is some debate as to the origins of the beloved hamburger, can we all agree that there is no better time than Memorial Day weekend to load up the grill with burgers? This Garlic Chipotle Mayo Burger has a fantastic blend of beef, leading to a juicy burger with a punch of flavor. Everything from the mayonnaise to the caramelized onions helps to elevate the burger we have come to love.


Garlic Chipotle Burger

Yield: ~5 Servings

Prep Time: ~15 Minutes Inactive Time: ~35 Hours Total Time: ~50 Minutes

Burger

1.  1 lb. beef blend: 70% ground chuck, 20% ground beef short rib, and 10% beef fat

2. 1 Egg

3. 2 garlic cloves, minced

4. 1/8th cup yellow onion, minced

5. 1/2 tsp. salt

6. 1/4th tsp. ground pepper

7. 1/8th tsp celery seed

8. 1/8th tsp chili powder

9. 1/2 tsp. ground mustard seed

Garlic Chiotle Mayo

1.  5 Tbsp. mayonnaise

2. 1 garlic clove, minced

3. 1 1/4th tsp. Adobo sauce from chipotle peppers

4. 1/8th tsp. salt

Caramelized Onions

1.  2 yellow onions, peeled and thinly sliced

2. 2 Tbsp. olive oil

Burger Guide

1. Combine all of the ingredients in a large bowl. Mix with your hands until the ingredients are incorporated. Be careful not to overmix the meat, or you will be left with a tough burger mix. Shape into roughly five quarter-pound patties.

2. Cook burgers on a grill or in a cast-iron pan to the desired doneness.

Garlic Chipotle Mayo Guide

1. In a small bowl, combine the ingredients and mix till combined. Adjust salt and adobo sauce for desired taste.

Caramelized Onion Guide

1. Heat a small saucepan over high heat with the olive oil. Add the onions; cook until caramelized to a deep golden color. (Stir occasionally; the onions need time to cook directly on the pan.)
